Cilantro Lime Shrimp

Let’s practice a little cheer.

You ask what’s the most popular meat in my household?  Hands down – it’s shrimp!

Cilantro Lime Shrimp

Serves: 4

  • 1 tablespoon Butter
  • 2 cloves Garlic, minced
  • 1 Medium Onion, chopped
  • ½ teaspoon Oregano
  • 1 cup Grape Tomatoes, halved
  • 1 Lime, zest and juice
  • Salt & Pepper, to taste
  • 1 lb. Shrimp, split and deveined
  • 2 tablespoons Cilantro, chopped

  1. Melt the butter in a skillet over medium-high heat. Add the garlic and onion. Cook until the onion begins to wilt, about 3 minutes.
  2. Add the oregano and cook another minute. Add the tomatoes. Stir occasionally until the tomatoes are soft.
  3. Add the shrimp, lime zest and juice, salt and pepper. Cook until the shrimp are opaque.
  4. Serve over a helping of Garlic Cheese Grits and top with cilantro. Yum!
