Corn Casserole

This is one of those dishes you always see at a pot-luck.  But I enjoy it so much that I don’t want to wait for the next party before I eat it again.

Ingredients
  • 2 eggs, beaten
  • 1 box Jiffy cornbread mix
  • 1 can whole kernel corn, drained
  • 1 can cream style corn
  • 1 cup sour cream
  • salt & pepper to taste
  • ½ onion, diced
  • ½ cup cheddar cheese, shredded

Instructions
  1. Preheat oven to 350 degrees and lightly grease a 9×9 inch baking dish.
  2. Saute onion in a little oil. Cook until onion is opaque.
  3. Mix together the corns, eggs, Jiffy, sauteed onion, sour cream, salt & pepper.
  4. Pour batter into baking dish. Sprinkle cheese over the top.
  5. Bake for 30-40 minutes until set and browned on top.
