Pine Nut Rice

My friend, Lori, shared this recipe with me years ago.  It goes well with any sauteed meat/veggie dish.  However, it’s such a great twist to just plain rice, that I fix it quite a bit for a side dish.

Find pine nuts in the produce section of the grocery store.  Keep them in the freezer, otherwise they will spoil very quickly.

Ingredients
  • 1 Tablespoon butter
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 1 ¼ cup rice
  • ⅓ cup pine nuts
  • 2 ½ cups chicken broth
  • salt & pepper

Instructions
  1. Saute onion and garlic in butter until tender.
  2. Add rice and pine nuts and saute for a few minutes.
  3. Add broth, salt and pepper. Bring to a boil and then cover pan and lower heat to a simmer until broth is absorbed and rice is tender, 20-30 minutes.
