My friend, Lori, shared this recipe with me years ago. It goes well with any sauteed meat/veggie dish. However, it’s such a great twist to just plain rice, that I fix it quite a bit for a side dish.
Find pine nuts in the produce section of the grocery store. Keep them in the freezer, otherwise they will spoil very quickly.
- 1 Tablespoon butter
- ½ onion, chopped
- 2 garlic cloves, minced
- 1 ¼ cup rice
- ⅓ cup pine nuts
- 2 ½ cups chicken broth
- salt & pepper
- Saute onion and garlic in butter until tender.
- Add rice and pine nuts and saute for a few minutes.
- Add broth, salt and pepper. Bring to a boil and then cover pan and lower heat to a simmer until broth is absorbed and rice is tender, 20-30 minutes.
