Hoisin Chicken + Pine Nut Rice

This is another recipe I’ve been making for a long time.  Thanks to my friend, Lori, who introduced me to it many moons ago!

Over the years of making this dish, I’ve discovered that the “order” of preparation of this is important. Follow these steps and everything will come out just right. Here’s what I do:

1. If you are making your own chicken broth (boiling water and adding chicken broth granules or cubes OR thawing out homemade broth) do it first.
2. Cube chicken and marinate in cornstarch and sherry.
3. Make rice – saute onion and garlic in butter until tender. Add rice and pine nuts and saute for a few minutes. Add broth, salt and pepper. Bring to a boil and then cover pan and lower heat to a simmer until broth is absorbed and rice is tender, 20-30 minutes.
4. Chop mushrooms and zucchini.
5. Saute chicken with a little oil until no longer pink. Add mushrooms and zucchini and cook until tender. Add sugar and hoisin sauce.
6. Serve chicken mixture on top of rice.

Ingredients
Rice
  • 1 Tablespoon butter
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 1 ¼ cup rice
  • ⅓ cup pine nuts
  • 2 ½ cups chicken broth
  • salt & pepper
Chicken
  • 3-4 boneless chicken breasts
  • 2 Tablespoons cornstarch
  • 2 Tablespoons cooking sherry
  • 1 package fresh mushrooms, sliced
  • 1 zucchini, sliced
  • 2 Tablespoons sugar
  • 2-3 Tablespoons Hoisin sauce

Instructions

You can find the Hoisin Sauce in the Asian food aisle.  The pine nuts are located in the produce section of my grocery store.
