Tacos & Taco Salad

Don’t we all have at least one night of the week when dinner must be quick?


And by quick, I mean – quick to make, quick to eat, quick to clean up.

This week it’s Tuesday for us.  Tacos {or some variety of tacos} to the rescue!  I have one who wants crunchy tacos, one who’d like soft tacos and me – I’ll have a taco salad.  No problem.  It’s all the same “stuff”, and everyone builds their taco to their own liking.  I love it when everyone is happy.

Do you really need a recipe for tacos?  Probably not.  However, I do make my own taco seasoning.  Why?  Do you really want to know how much salt and other mysterious powders are in a packet of taco seasoning?  Again I say, probably not.

Homemade Taco Seasoning

Serves: 4

  • 2 teaspoons chili powder
  • 1 ½ teaspoons salt
  • 1 teaspoon cumin
  • 1 teaspoon cayenne or paprika (depends on desired heat)

  1. Mix together. Add seasoning and ½ – ¾ cup of water to 1 pound of cooked ground beef.
  2. Simmer for 15 minutes and serve as tacos or taco salad.


Brown the meat along with some diced onion and chopped garlic.  Drain the grease from the meat and then add the Taco Seasoning and simmer.

Our favorite toppings include: shredded lettuce (or spinach for the salads), diced tomatoes, shredded cheese, avocado slices, salsa, and Ranch dressing.  Don’t forget the crunchy taco shells, tortillas, and chips!
